Of course, there are a few little tricks — but if you follow them, you’ll be rewarded with the perfect dessert: moist, irresistible, and melt-in-your-mouth delicious from the very first bite. It’s love at first sight… and first taste! ❤️
What Preparation Do You Need?
- Bring the eggs to room temperature — Cold eggs can make the brownie base less fluffy. Take the eggs out of the fridge at least 40 minutes before you start baking.
- Watch the baking time carefully — Follow the recommended baking time in the recipe strictly. About 5 minutes before the suggested time is up, check the brownie with a toothpick. If it comes out clean, take it out immediately to avoid drying it out.
- Use parchment paper — It will save you cleaning time and make it much easier to lift the brownie out of the pan and slice it into neat pieces.
- Be gentle when mixing — After adding the flour to the brownie mixture, mix gently with a spatula by hand. Overmixing can activate the gluten and ruin the texture. Stir just until combined for the best result.
- Do not add leavening agents — This is one of the most common mistakes (I must admit, I used to make it too!). If you add baking powder or baking soda, you’ll end up with a fluffy cake instead of the dense, fudgy brownie we’re aiming for. Delicious, yes — but it won’t be a true brownie.
- Use a metal baking pan, ideally 20×20 cm (8×8 inches), for even baking. Ceramic pans can cause the edges to overcook or burn. If you don’t have a pan of this size, just make sure to check the brownies more frequently as they bake.

- Melting the Chocolate Over a Water Bath
The first step is to melt the dark chocolate together with the butter over a water bath. To do this, place a larger pot of water on the stove and set a smaller bowl or saucepan over it, adding the chopped chocolate and butter inside. Gently heat the water and stir the mixture until the chocolate and butter are completely melted and smooth.
If you prefer, you can also use a microwave, but be very careful — chocolate burns easily. Heat in short intervals of a few seconds, stirring between each, until you achieve a silky, even texture without burning.
Once done, set the mixture aside and let it cool for a few minutes.
- Whisking the Eggs and Sugar
In a separate bowl, beat the eggs together with the sugar until you get a light, fluffy mixture. Then add the vanilla extract for an extra touch of aroma.
- Combining the Wet Ingredients
Gently pour the melted chocolate and butter mixture into the egg mixture, stirring continuously to combine everything smoothly and evenly.

- Adding the Dry Ingredients to the Wet Mixture
Sift the flour together with the cocoa powder and a pinch of salt. Then, carefully add the dry ingredients to the wet mixture. It’s best to use a spatula and stir slowly and gently.
It’s very important to stop mixing as soon as everything is combined — overmixing activates the gluten, and instead of a rich, fudgy brownie, you might end up with… a cake.


- Baking
Pour the batter into a rectangular baking pan lined with parchment paper. Bake the brownie in a preheated oven at 180°C (350°F) for about 25–30 minutes.
A good tip is to start checking around the 20-minute mark by inserting a toothpick or a wooden skewer into the center. If it comes out with a few moist crumbs (but no wet batter), your brownie is ready.
